The course begins with the right tools: Cornelia shows you how to optimally prepare your kitchen for making pasta and which essential ingredients make Italian cuisine so special. Next, you’ll learn the secrets of the perfect pasta dough—with and without eggs—and discover how much variety is already hidden in the dough itself.

A special highlight: Cornelia opens the doors to her personal world of enjoyment and takes you to Italy—to her favorite producers, to artisanal products, and culinary discoveries. In the “Handmade Pasta” chapter, you’ll put what you’ve learned into practice—from pea ravioli with Carabinieri prawns to tagliatelle alla chitarra with truffle from a wheel of Parmesan.
